Turkey Veggie Skillet
Ingredients:
(Choose organic and locally sourced when available)
- 1 pound ground turkey
- 2 zucchinis, chopped
- 1 onion, chopped
- 2 red peppers, chopped
- 3 cups fresh spinach
- 2 tablespoons tomato paste
- 1/4 cup chicken or vegetable broth
- 1/2 teaspoon each of chili powder, paprika, garlic powder, oregano, parsley
- Salt & pepper, to taste
- 2 tablespoons olive oil
- 1.5 cups cooked brown rice
Instructions:
👉 Prep first for efficiency: Chop your veggies and measure your spices into one bowl for easy adding.
- Heat 1 tablespoon olive oil in a large skillet and sauté ground turkey until fully cooked. Remove and set aside.
- In the same pan, add 1 tablespoon olive oil and cook onions, zucchini, and red peppers until tender.
- Stir in spices and cook for an additional 2-3 minutes to enhance the flavor.
- Add tomato paste and broth, mixing well. Cover and simmer for 5 minutes.
- Toss in fresh spinach and stir until wilted.
- Serve over cooked brown rice.
