One Pot Delicious

It was Sunday afternoon. We'd had a fun, busy weekend. I had a hangry family that needed to be fed and the last thing I wanted to deal with was wash a sink full of dishes.Thankfully, this one pot recipe saved me (and my hubby!) from having to wash too many dishes and filled our stomachs just right.




This recipe is loaded with lean protein, fiber, and flavor, and will keep you warm on these cold winter evenings.

You COULD put this all in the crock-pot, but I didn't start dinner until 4:30pm, so onto the stove top it went and we were able to sit down before 6pm. If you choose to cook this in the crockpot, cook on high for 4 hours or low for 6-8 hours, and don't add the noodles & spinach until the very end.

Ingredients: (choose organic and locally sourced when available)
1 pound ground turkey
1 onion, chopped
4 celery stalks, chopped
4 carrots, peeled and chopped
1 cup butternut squash, skin removed and chopped (I used the neck of the squash, saving the rest to be roasted for another meal. You could also use from cubed squash).
4 cups spinach
2 cups dry pasta (I used brown rice gluten free fusilli)
1 can cannellini beans, drained
4 cups chicken broth
2 tbsp tomato paste
3 minced garlic cloves
2 tbsp olive oil
salt & pepper to taste
1 tbsp thyme
1 tbsp parsley
2 bay leaves

Directions
1. In a large pot, pour in 1 tbsp of olive oil. Add ground turkey and brown until fully cooked. Removed from pot and set aside.
2. In the same pot, pour the rest of the olive oil. Saute onions, celery, garlic and carrots for 5 minutes, until onions are translucent.
3. Add in butternut squash, beans, tomato paste, cooked browned ground turkey, and broth. Add all seasoning.
4. Bring to a simmer and cook for 40. Add pasta and spinach. Cook for an additional 10 minutes, until noodles are fully cooked.
5. Remove bay leaves prior to serving.

Makes 6 servings.
